So you may have read in my High Five for Friday post that I have a slight obsession with Kale chips! I love them... they are soooooo delicious and you feel like you're having something naughty when really they are insanely healthy! So when I was deciding what to make for Super Bowl munchies, Mr. "I'm healthy now" made it clear he didn't want anything "bad for you"... so of course I knew Kale chips would be on the menu... now I needed something else... and then I saw these roasty toasty Spicy Chick Peas at Our Best Bites and that was that...
You can buy bunches of whole kale leaves at the grocery store or you can buy these pre-washed and pre-chopped bags or at least at my local store you can... If you don't have this luxury... just make sure you wash each individual kale leaf before chopping it into chip size pieces.
Preheat your oven to 400 degrees. Then spread the greens out on a lined bake sheet and drizzle with enough olive oil to give a nice coat and then sprinkle with sea salt. Regular salt will do but those chunks of sea salt just all a little somethin' somethin'...
Pop them in the oven for about 15 minutes.
You want them to come out like this... quite shrunken and the edges nice and crisp. You can certainly leave them in a bit longer for more crunch... I like to pull them at exactly the point where the edges are deliciously crisp but the stems are still crunchy and remind you that you're eating a vegetable.
You will thank me once you try this... of that I am sure. Matter of fact when I was at the store this weekend buying me some kale... the checkout lady asked what one would make with kale and I gave her this recipe... apparently she enjoyed my description because she gave me my groceries for free!!! NOT. I wish... and so did she... she said she wished she could give me the whole $40 worth as a gift for such a yummy recipe... damn that manager who was bagging my groceries and keeping a close eye on her!
